Chicken Cordon Bleu

Chicken is always a great low cal protein for meals. With so many different ways to prepare it, you can make it a regular part of a healthy diet. Here is a great recipe for Cordon Bleu from Get Fit Lake Chelan.

4 (4 ounce) skinned boneless chicken breast halves
3 tablespoons chopped fresh parsley
1 teaspoon dried Italian seasoning, divided
4 (1 ounce) slices reduced fat, low sodium cooked ham
4 (1 ounce) slices part skim mozzarella cheese
1 tablespoon nonfat mayonnaise
1 teaspoon warm water
1/3 cup soft bread crumbs
Vegetable cooking spray
Fresh oregano sprigs (optional)


Place chicken between two sheets heavy duty plastic wrap, and flatten to ¼ inch thickness, using a meat mallet or rolling pin. Sprinkle chicken with chopped parsley and ¼ teaspoon Italian seasoning. Place one slice of ham and one slice of cheese on each piece of chicken. Roll up tucking ends under, then secure rolls with wooden picks.

Combine mayonnaise and water, brush over entire surface of chicken rolls. Combine bread crumbs and remaining ¾ teaspoon Italian seasoning. Dredge rolls in bread crumb mixture.

Place rolls seam down on a baking sheet coated with cooking spray. Bake at 425 degrees for 20 minutes, or until chicken is done. Remove wooden picks before serving. Garnish with fresh oregano sprigs if desired. Makes 4 servings.
