Here’s Another One Of Ben’s Favorites

4 (4 ounce) skinned, boned chicken breasts
2 tablespoons all purpose flour
1 teaspoon paprika
1/8 teaspoon ground red pepper
Vegetable Cooking Spray
2 tablespoons dry white wine
2 tablespoons lemon juice
2 teaspoons reduced calorie margarine
½ teaspoon chicken flavored bouillon granules
Place chicken between two sheets of heavy duty plastic wrap, and flatten to ¼ inch thickness, using a meat mallet or rolling pin. Combine flour, paprika, and red pepper in a shallow bowl; dredge chicken in flour mixture.
Coat a large non stick skillet with cooking spray; place over medium high heat until hot. Add chicken and cook 3 minutes on each side or until done. Remove to a serving platter, and keep warm.
Add wine, lemon juice, margarine, and bouillon granules to skillet. Cook stirring constantly, 1 minute or until margarine melts. To serve, drizzle wine mixture over chicken, and sprinkle with chopped parsley. Garnish with lemon wedges, if desired. Yeild: 4 servings.
