The First Get Fit Lake Chelan 2014 Fall Cooking Class was September 30 at the Chelan Senior Center.
There was a great turn out for the first cooking class of the Fall 2014 Get Fit Lake Chelan Challenge. Tony Rose demonstrated a quick, easy, and nutritious way to make Peach – Orange Marmalade Chicken Thighs.
Enjoy this recipe that follows. Nutrition information is included. The peach orange marmalade was home made. I will post the recipe for it in a couple of days. Any store bought preserves will work. Peach Orange Glazed Chicken Thighs
1 teaspoon vegetable oil
1 pound boneless skinless chicken thighs. (breasts can be substituted if desired)
1/2 cup Peach Orange Marmalade
3 tablespoons balsamic vinegar ( I prefer Colavita Brand)
1 green onion chopped
1/4 teaspoon pepper
1.Coat a large nonstick skillet with cooking spray, add oil and place over medium high heat until hot. Add Chicken, and saute 6 minutes on each side or until done. remove chicken, set aside and keep warm.
2. Reduce heat to low, add Marmalade and remaining 3 ingredients. Cook stirring constantly, until preserves melt and onion is tender. Spoon preserve mixture over chicken. Yield 4 servings.
