Lake Chelan Get Fit participants gathered at the Northshore Bible Church tonight to listen to Timi Starkweather show us a great low fat dish to prepare. Just in case you missed it here is the recipe that she prepared.
Ginger Beef and Edamame Stir Fry
- 11/2 lb. bottom round steak, well trimmed
- 2 tsp. dark sesame oil
- 3 large garlic minced
- 2 tbsp. minced fresh ginger
- 2 tbsp. reduced sodium soy sauce
- 1 . cornstarch
- 1 cup frozen shelled edemame
- ½ cup thinly sliced orange pepper
- 2 scallions
Slice the beef across the grain into ¼ inch slices.
In large nonstick skillet or wok, heat the sesame oil over high heat until almost smoking. Add the garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add beef and cook, stirring occasionally, until lightly browned, about 5 minutes.
Meanwhile in a small bowl, combine the soy sauce, cornstarch and 3 tbsp. water.
Add the edemame, bell pepper, scallions to the beef mixture. Cook stirring until heat through, about 1 minute. Add the soy sauce mixture and cook until the sauce thickens, about 2 minutes. Divide evenly among 4 plates and serve hot.
