Seared Scallops With Ginger Soy Sauce

This super fast entree features succulent sea scallops and is perfect for and intimate gathering, since it comes together so quickly. To ensure crisp browned scallops, pat any excess moisture from them just before seasoning and pan searing.


3 tablespoons low sodium soy sauce
2 tablespoons chopped green onions
1 tablespoon copped peeled fresh ginger
1/8 teaspoon crushed red pepper
1 1/2 pounds large sea scallops ( 12)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Cooking spray
Thinly sliced green onion, (optional)


1. Combine soy sauce and next 4 ingredients in bowl

2. Pat scallops dry with paper towels; sprinkle with salt and pepper. Heat a large skillet over medium high heat. Coat pan with cooking spray. Add scallops to pan, and cook 3 minutes on each side until browned. Transfer scallops to a platter, drizzle with soy sauce mixture. Garnish with sliced green onions, if desired.
